A wine cellar in the Mojave is a building-science problem wearing millwork. Hold fifty-five degrees and sixty percent humidity inside a room whose exterior sees a hundred and ten, and every detail of the envelope has to be right — because the failures are slow, hidden and expensive.

The envelope decides everything

The temperature and humidity difference between a cellar and a Las Vegas summer is larger than almost any other assembly in a house has to manage. Vapour drive is relentless and in one direction.

That means a continuous vapour barrier on the warm side, insulation appropriate to the delta rather than to code minimum, and genuinely sealed penetrations. A barrier interrupted by a single carelessly cut light box is not a barrier. Get this wrong and the symptom is not discomfort — it is condensation inside the wall, and the damage is done long before anyone sees it.

Cooling sized to the room, not the catalogue

Cellar cooling is sized to the actual heat load: envelope, glazing, lighting, door, how often it is opened, and how much thermal mass is inside. Undersized equipment runs constantly and still misses the target. Oversized equipment short-cycles and drags the humidity down, which dries corks — the exact failure you built the room to prevent.

Condensate has to go somewhere, and the unit needs service access that does not involve dismantling the racking.

Glass, doors and the part people photograph

Glass walls are the reason many cellars get built and the hardest part to detail. Insulated glazing, a properly gasketed door with a genuine seal, and a frame that does not become a thermal bridge.

A cellar door is closer to an exterior door than an interior one. Specifying it as interior joinery is a common and costly mistake.

Racking as millwork

Racking is carpentry, done in species that tolerate sustained humidity and detailed for the bottles actually being stored — large formats, magnums and case storage all have different requirements.

Below-grade cellars in the southern valley add excavation through caliche, which is priced in from the start rather than discovered.
